Maple Syrup Honey Products
All of our honey is raw, organic, honey that is never heated and is filtered only through cheese cloth so you get a great honey that has a fresh just-out-of-the-comb taste. If liquid honey crystallizes (turns solid), which happens to all honey that has been stored for a long time, place it in a pan of warm water until the honey is liquid again. Honey should be stored in a warm place.
Note that the honey marked with an asterisk (*) are tropical wild varieties, gathered in Florida. The others are gathered in New England.
Raw Local Unprocessed Honey
NEW! Extremely Raw Honey Beneath the canopy of Florida's vast sub-tropical forests and pine woods, honey plants grow in profusion, particularly gallberry and saw palmetto. This acreage is not cultivated, fertilized or chemically sprayed, and the honey produced there is Tropical Wild Honey. This honey is bottled without filtration and at moderate temperatures to insure its full nutritional spectrum of natural pollens, enzymes and antioxidants. Tropical Wild Honey (indicated below with an *) is perfect in any recipe using honey.
Orange Blossom Honey* Of the many prized honeys, none is more unique than Orange Blossom Honey. When Florida orange groves blossom in early spring, the air is filled with their perfume. Orange Blossom Honey is fragrant, delicate and perfect when spread on toast, waffles, pancakes and other breakfast breads. It makes a delicious topping for yogurt, ice cream and fruit salads.
Tupelo Honey* Tupelo Honey is one of the world’s rarest honeys. Produced along the Apalachicola River basin and surrounding swamps in Northwest Florida, tupelo honey is naturally higher in simple sugars such as fructose. Because of this, tupelo honey never granulates and it tastes sweeter, so you can use less of it to achieve the same level of sweetening.
Saw Palmetto Honey* One hundred years ago, our area of Southwest Florida shipped the honey and berries of the Saw Palmetto to the capitals of Europe for their health-giving qualities. Today, Saw Palmetto is again the source of health supplements. This bright, distinctive honey is particularly good in desserts and teas and has a light natural cinnamon flavor.
Gallberry Honey* Gallberry Honey is sourced from a small evergreen holly bush that grows along the Gulf Coast of Florida and produces a unique honey that is thick and aromatic, a perfect table honey, and also recommended for baking. Gallberry Honey is known for its lack of granulation due to it’s high pollen and enzymes content and is therefore slow to crystallize.
Wild Maine Blueberry Honey Weil Farms Wild Maine Blueberry Honey captures the essence of the tiny white blossoms from the Blueberry bush and brings it to your table. Wild blueberry bushes from the farmlands of Maine produce a full-bodied honey with a deep, rich, blueberry flavor. This honey is perfect for salad dressings, meat glazes, toast, and pancakes. Buckwheat Honey Buckwheat honey is a medium to dark honey which comes from the bees pollinating buckwheat flowers. Several recent studies suggested that dark honeys tend to have higher antioxidant compounds than lighter ones.
Blueberry Wildflower Honey
We pollinate many farms in Connecticut
and one of our specialties is the blueberry crop. Blueberry Wildflower
Honey has a medium honey color and an aroma reminiscent of green leaves with
a touch of lemon and a moderate fruity flavor with a delicate aftertaste. To
best experience the taste, let the honey sit in your mouth for a short time.
Many people can experience the actual taste of Blueberries in the honey.
Use it for breakfast on blueberry pancakes, French toast or waffles. Use it
in an otherwise unflavored tea to enjoy the fruity sweetness, or simply as a
spread on toast or biscuits.
Raspberry Clover Honey
Many of the farms we pollinate have
large raspberry fields that produce a light honey with a great taste. Many
honey lovers eat this honey straight out of the jar. It is also good in
teas, on biscuits, or just plain toast! To best experience the taste, let
the honey sit in your mouth for a short time. Many people can experience the
actual taste of the raspberries in the honey.
Creamed Honey is honey
specially processed so it is smooth, spreadable and creamy. It is 100%
honey; no cream is added. Just like the old fashion honey butter with no
butter, fat, or cholesterol, just 100% pure honey!
Comb honey is the rawest form of
honey. We actually take a device that looks like a cookie cutter and cut
out pieces of the hive (no bees allowed!). Comb honey has a great fresh
taste and can be chewed like gum or melted on toast, pancakes, French toast,
waffles or anyway you like it. Buy one for your parents I’m sure they
remember this old time treat.
